I need to find out exactly what they mean?
specifically for my engine color?

The VIN won't give you the info you seek.
Car build info is on the plates installed in the engine bay or on a RPO label (if fitted )

you should be in C3 section..but, 1Z-Corvette ..87-coupe....4 -L-82 engine option .....8 -model year78.......S - St Louis Plant ... post in C3 if you need additional help
