Manual says Dot 3 for the brakes in a C6. Is there any reason why I couldn't use Dot 4 in the brakes? It's just able to take more heat right?

The Corvette ships with DOT 3 and that is perfectly fine for everyday use and light track duty. Moderate track duty and performance driving would suggest DOT 4. DOT 4 is fine and completely compatible with the C6 brake system. DOT 4 simply has a higher temperature capability. Do not use DOT 5 under any circumstances, it is silicone based and not compatible with the Corvette ABS system. You can use DOT 5.1.

You are good with Dot 4, many Vette owners run the Dot 4 instead of Dot 3.

I use DOT 4 in both clutch and brakes - makes it easier. (Motul RBF 600 for me)
