My 2001 is running around 218 degrees? Is this about right or is this considered high?

Perfect temp! If you start getting close to 270 then you can get worried!

FYI You want to get above 212 to burn off moisture and various other contaminants. That's why it's never a good idea to just start your car once in awhile if it's in storage, the temps need to get up to burn that crud off.
