Would I notice a difference going with a aftermarket sway bar like the T1 or Pfadt? Or is the stock Z06 sway bar already top of the food chain?

Those will stiffen up the ride. What's your intended use.

If you are doing HPDE's or RR then you might think about those along with coil overs. If not, I would stick with your OEM equip.
