Holly Sh#$ a shop wanted to charge me $235 to replace the spark plugs with GM stock plugs? Can this be correct or a mechanic trying to pull a fast one? What are the best plugs?

Book time in AllData calls for 2.1 labor hours. So depending upon the shop and their labor rate it's not out of the ballpark. We usually charge less since we do them fairly often and can do them quicker but if it's a dealership you pay whatever the book calls for.

Save yourself some money, go down to auto store and pick up set of plugs and install them yourself. Plugs are easy to swap out. Your looking at approx $60 to $70 for set of good spark plugs and little investment of time!
