I currently have the Nitto Invo's and love these tires. I'm also looking at a second set of tires for the track and messing around. Considering stickiest and how the tire feels on the road which out of these tires would you go with? Nitto 555R's vs Hoosiers R6 vs Michelin Pilots?

Not sure how you can compare those.
Hoosier are probably the best for autocross, etc. but they won't last long.
Pilots are a true street tire.

I've got the Nitto 555's on my 87, and I like them. They're sticky enough to drive hard, but still give a good ride. The only thing I dont particularly care for is the sidewalls are a tad bit taller>

Actually, the Hoosier R6 is a road and track race tire. The Hoosier A6 is the autocross compound.
However, I think the principle you're going for is absolutely right ... my personal opinion (feel free to disagree) in order of mostly meant for street use to mostly meant (well, purely meant) for track use I'd say -
1. Pilots (depends very much on which version - A/S or PS2 ... presumably PS2....)
2. Nitto 555R's
3. Hoosier R6s
