Has anyone ever taken the side molding off the doors for painting on a C4?

Yes, is there any other way to paint a Corvette. All you do is remove the door panels and with the window up it's easy to remove the molding, It's a little more work but it's worth it in the end if your looking for a 100 point paint job.
