Is it beneficial for me to go right to a 160 or what would be? I will be having my vette tuned afterward.

Your oil temperature is determined by your coolant temperature. As such, your oil will never reach it's desired 175-185 degrees if you're running a 160 degree thermostat.

When your oil is too cold, it doesn't get wiped off the cylinder walls properly and ends up getting burned in the combustion chambers. And when it gets burned, it turns into a gummy goo that sticks to the underside of the valve heads, coats the valve stems, and plugs up your catalytic convertor. And cold oil doesn't flow through your engine's bearings or hydraulic lifters as well as hotter oil.

My advice to you is run the 195 degree thermostat that should be in your engine. Because unless you're running a lot of boost, there is no gain whatsoever in running a colder thermostat.

Don't forget the thermostat will open at 160. in cold climates the coolant will never get warm enough to get the oil to its proper efficiency. in hot climates the temp will still get to the normal operating temp of a C5, 200 give or take a little. so why change it

That in combination with other components and a good tune all together make a difference.
