I think I would start with putting a tarp down first to help keep any ground moisture from rusting your brakes and frame. Then I would put moth balls under the car to keep critters away and put dryer sheets in the interior. Then put on a nice car cover. Last I would put on a battery tender on the battery. If no electric available I would pull the battery and put it on a trickle charger somewhere.

I'd pull the battery anyway

I assume this is on a farm or comparable. I'd do what's been said and a little more. Before the tarp, get a couple of sheets of plywood and put it down where you will be parking, then the tarp. Get some cake mouse poison (like "Tomcat" from HD). Put a cake per paper plate and put about a half dozen down under the car. If you have non-oxygenated gas available (usually listed for collector cars), run the tank down and fill it with that and add a can of Seafoam and run it for about 5-10 miles first. Check the level and quality of all your fluids including antifreeze. If you can, get some Visquene and fill the gap at the bottom of the walls and run it a foot or so inside from the wall. Put some dirt on it to hold it down. Stuff some steel wool into the exhaust tips to keep the mice out. Do everything else that's been mentioned plus wash and wax the car.

Block the wheels, don't set the parting brake and I'd leave it in neutral. If you have a manual heater control, close it down.

During the winter, go and start it every month or so that it gets up to operating temperature.
